Venison Maurice Recipe

Ingredients
1/4 cup Sherry
5 lb. Venison roast
1 lb. Carrots (2" lengths)
1 lb. quartered Onions
1 lb. quartered Potatoes
1 lb. Bacon
10 oz Cajun Injector Creole Garlic marinade
Serves 10

Many people have asked us to add some Cajun wild game recipes.
And this is one of our favorites. (The back strap is the prime piece of venison to use in this recipe)
Inject roast with the marinade and place in a 2 inch deep pan. Arrange bacon on top of roast. Place cut vegetables around roast. Pour sherry over roast and veggies.
Cover and cook at 350 degrees for 90 minutes (time may vary depending on oven).
To brown, remove cover 30 minutes before roast is done.
