What's a Po' Boy? (Also known as po-boy, po boy, or poor boy)
A Po' Boy is a traditional submarine sandwich from Louisiana. It almost always consists of meat or seafood, usually fried, served on baguette-like Louisiana French bread.
It is made up of an entire small loaf of French Bread, or about 1/4 of one of the extremely long loaves of French Bread, sliced lengthwise into a top and bottom.
It is then spread with Mayonnaise and topped with Creole Mustard, Ketchup, Olive Salad, or other appropriate dressing or sauce.
Louisiana restaurants ask you if you want your Po' Boy "dressed" which means with mayonnaise, lettuce and tomatoes, or any other condiments you desire.
You then lay your preference of meat and cheese along the length of the loaf, add pickles if you wish, and close it up. Then cut the loaf into shorter sandwiches suitable for everyone.
