Ingredients
1 cup chopped onions
1 cup chopped celery
1 cup chopped green bell peppers
1/2 cup olive oil, divided
3 cloves garlic, crushed
3 lbs catfish filets, cut into small pieces
1 bunch parsley
1 16 oz can tomatoes
2 cups dry white wine
1 cup water
ground cayenne pepper to taste
2 bay leaves
1 lb raw shrimp, peeled
1 lb white crab meat
12 oz oysters with liquid
Cajun Shake Cajun Seasoning to taste
Serves 20
Cooking
Saute the first 4 vegetables in 1/4 cup olive oil until tender. Lightly saute the catfish (or any alternate mild white fish) in the remaining olive oil. In a large pot, combine the vegetables and fish with all of the remaining ingredients, except the shrimp, crab and oysters. Bring to a boil and simmer gently for about 30 minutes. Adjust seasonings and add more wine if more liquid is needed. Add seafood and simmer until fish is cooked (about 10 minutes). To serve, replace parsley with fresh sprigs and top each serving with slices of french bread toasted with parmesan cheese..
