Sometimes referred to as "fromage de tete" (Head Cheese) or "pate de tete", hogshead, hoghead or head cheese, this is an authentic traditional Cajun specialty meat dating back to the times of the old Cajun Boucheries and Charcuteries.
Head cheese is in fact not a cheese at all, but rather a seasoned terrine of meat. It is usually eaten cold or at room temperature as a luncheon meat, for hors d'oeuvres, or as part of the main meal.
