Here's a brief description of our Poche products: Chaurice: A fresh spicy Cajun sausage made with lean pork meat, seasonings, crushed garlic, vinegar, jalapeno peppers, and chives stuffed into natural hog casings. Smoked Chaurice: Fresh spicy Cajun Chaurice which is smoked until rich in color and flavor. Cajun Tasso: Large pieces of tender lean pork tumbled in a special Cajun seasoning mixture, then smoked to perfection in our smokehouse. Tasso is the perfect flavoring for lots of Louisiana dishes and sauces. It's delicate smoked flavor makes it the perfect ingredient for your favorite sauces. Terrific as a pizza topping. Duck & Chicken Sausage: A delicious combination of boneless duck and chicken meat blended with the perfect amount of seasoning. This product is delicious in gumbos or pan-fried.
